3 dozen fresh or frozen (thawed) smelts
1 cup flour
parsley and/or oregano
1 tsp. salt, or to taste
1/2 tsp. fresh ground pepper, or to taste
oil for frying

Directions:
To prepare the smelts remove the heads.

In a shallow pan (like one of the 9 inch foil pans restaurants provide leftovers in) combine the flour, salt, pepper and spices. In small batches, dredge the smelts completely in the flour mixture.

Heat a large nonstick frying pan to medium-high. Heat the oil in the skillet. Fry the smelts on all sides (about 2-3 minutes per side.) Don't crowd the smelts - have room between them.

When done, drain on paper towels.

Serve with lemon.
