1 cup all purpose flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1 cup buttermilk or sour milk*
2 tbsp cooking oil
1 tbsp lemon juice

Directions:
Directions:
1.Combine dry ingredients in large bowl, and make well in center.
2. Mix egg, buttermilk, and oil, and add all at once to flour mixture. Stir just until moistened. Add lemon juice and stir until mixed in.
3. Pour about 1/4 cup batter into a 3 inch circle onto a hot, lightly greased griddle. Cook about 2 mins on each side, or until golden brown, turning to second side when pancakes have bubbly surface, and sides are slightly dry.

*Sour milk: 1 cup milk in a glass cup, add 1 tbsp lemon juice, leave sit 30 mins, great substitute for buttermilk.
