2 pounds ground turkey (can use 2 pounds of ground round)
2 med to large onions chopped
1/2 cup diced green peppers (optional)
1/2 cup diced celery (optional)
1/2 cup chopped green onions (optional)
2 can whole kernel corn-undrained
1 can Blue Runner black beans-undrained
1 can Blue Runner red beans-undrained
1 14.5 oz can diced tomatoes
1 can original Rotel tomatoes with green chilies
1 4.5 oz. can green chilies
1 or 2 large cans (11.5 oz) V8 juice
Tony's Creole Seasoning to taste
Black pepper to taste
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch dressing mix
1 (4.6-ounce) can black olives, drained and sliced, (optional)
Brown the ground beef or turkey in a large pot.
Drain the excess fat.
Add all fresh vegetables: yellow and green onions, green peppers, and celery and cook until tender and well wilted.
When serving, top soup with broken taco chips and shredded cheddar cheese Enjoy
Add ALL remaining ingredients: beans, corn, tomatoes, green chilis, black olives, taco seasoning, and ranch dressing mix
Simmer over low to medium heat for about 1 hour. (Or you can transfer to a slow cooker for 6 to 8 hours.)
