Ingredients:  
2 cups flour
3/4 cup sugar
1 1/2 tsp.. baking powder
1/2 tsp.. salt
2/3 cup pecans - chopped
1 egg
1/4 cup canola oil
3/4 cup orange juice
Grated orange peel of 2 or 3 oranges. The more the better
1 1/2 cups chopped rhubarb (fresh or frozen)

Combine dry ingredients. In separate bowl combine egg, oil, orange juice and peel. Add to dry ingredients and stir just until moistened. Stir in rhubarb and nuts

Bake 25 - 30 minutes at 375F

I ran across this recipe a couple of years ago. The flavour of the orange peel and rhubarb is unbelievable. Hope you like it. I love muffins as I usually have fruit and a small muffin for lunch (you know gotta watch my weight). Here goes.
