1 Roasted chicken from Deli
2 boiled eggs ,peeled
1/2 sweet onion
1/4 c. pickle relish
1/2 c to 3/4 c. mayonnaise
1/2 tsp. Old Bay Seasoning
1 peeled and chopped gala or pink lady apple
Salt and pepper to taste.

Directions:
Directions:
Remove skin and separate chicken from bone.
Place chicken, onion and eggs in food processor and chop. Add chopped mixture to bowl and add relish, mayonnaise, seasoning and chopped apple.
Stir together.

If I want a coarser salad I hand chop the meat. We prefer the apple to celery in this salad. Chopped roasted pecans are also a good addition. If the salad is to dry I sometimes add a little canned chicken broth instead of more mayonnaise.
