8 - 10 medium peaches peeled and diced into small pieces; set aside
1 can condensed milk
1 packet Knox gelatin
3 T water
1 pkg, Angel Food Cake Mix (I use Betty Crocker)
1 container Cool Whip
Powdered sugar

Place peeled peaches in a bowl
Pour condensed milk over peaches
Mix together
Set aside
Mix cold water and jello packet together in clear bowl
Heat in microwave for 5 - 10 sec. until foamy
Pour into peaches and stir
Cover and put in fridge
Cover 2 jelly roll pans with parchment paper
Mix angel food cake per directions on box
Pour half of cake mix into each jellyroll pan and spread evenly
Bake at 350º per box directions (15 - 19 min.)
Keep an eye on and half way through baking switch pans to different rack
Let cool slightly and then flip cake onto a dish towel and lay flat on the counter
Peel off parchment carefully
Remove peach mixture checking for thickness (if too thin, add another half of jello packet foamed)
Evenly spread Cool Whip mixture onto each cake
Cover with peach mixture and spread evenly
Roll each cake into a tight roll
Wrap in the dish towel securing edges
Sprinkle with powdered sugar
Refrigerate until thoroughly cooled (1 hr.)
remove.
Cut onto slices.
Serve

Great for family get together. My mom used to make this for us when we had a family meal. It was perfect for 5 growing boys! I also make it for your dad's work crew a lot)
Tip: Lay parchment paper on top of one pan, then place the other pan on top
Press top pan to fit in bottom which causes the parchment paper to make a perfectly fitting mold. then place each piece onto each pan.
