1 med onion chopped
1/2 green pepper diced
1 tbsp minced garlic
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp cumin
1/2 tsp red pepper flakes
2 tbsp olive oil
3 cans black beans drained and rinsed
1 can crushed tomatoes
1 can diced tomatoes with chilies

Directions:
Directions:
1. Heat olive oil in large pot over med heat, add onion, garlic, peppers, salt, pepper, pepper flakes, and cumin. Simmer for about 5 mins, stirring often, until peppers and onions are slightly tender.
2. Add black beans and tomatoes, and simmer covered over med-low heat for approx 30 mins, or until beans are tender, stirring occasionally.
3. When done add in cooked brown rice, or serve over top of cooked brown rice.
