2 cups sugar
1 1/2 cups vegetable oil
2 tsp vanilla
3 eggs
3 cups flour
1 tsp baking soda
2 med apples peeled and finely chopped


Carmel Glaze
1/2 cup butter or margarine
1/2 cup packed brown sugar
2 tsp milk

Directions:

Heat oven to 350.
Beat sugar, oil, vanilla and eggs in large bowl on med speed until light and fluffy. Stir in flour and baking soda until smooth. Stir in apples. Pour into bundt pan and bake 1 hr- 1 hr and 20 min or until toothpick comes out clean.Cool 20 min. Remove from pan to wire rack. Spoon glaze over warm cake.

Directions for glaze

Heat all ingredients to boiling in 2-qt saucepan, stirring occasionally. Boil 2 min, stirring constantly, remove from heat.
