left over mashed potatoes
1 onion, diced
1 egg
1/4 cup flour, added as needed
salt & pepper to taste
lard (or shortening)

Directions:
Directions:
Mix potatoes, onion, and egg, adding flour to get right consistency to hold together. Spoon out, make a patty; add lard or shortening to pan and heat. Place patties in pan to fry on low heat. Turn when one side browns. Fry until both sides are golden brown.

We usually had mashed potatoes with Sunday dinner, and Mom would keep any leftover mashed potatoes to make potato cakes the next day. She always served them with soup beans and cornbread. She made the best potato cakes I have ever eaten.
