1 lb. leam ground beef or ground turkey
1 c. Onion
1/2 c. green bell pepper, chopped
1/2 c. red bell pepper, chopped
1 can (11 oz.) whole kernel corn, drained
1 can (8 oz.) tomato sauce
1 package (1.25 oz.) taco seasoning mix
1 c. shredded cheddar cheese

Topping:
1/2 c. buttermilk pancake mix
2/3 c. 2% milk
1 egg slightly beatened
2 tsp. vegetable oil

Directions:
Directions:
Preheat oven to 350º. Combine ground beef and onion in large skillet. Cook until meat is no longer pink. Add peppers and corn, cook 2 minutes over medium heat. Add tomato sauce and taco seasoning; Cook 2-3 minutes or until heated through. Pour hot mixture into an 8x8 or 9x9 baking dish. Sprinkle with cheese; set aside.
For topping, combine pancake mix, milk, eggand oil; stir with wire whisk until large lumps disapper. Pour over beef mixture; spread evenly. Bake 30-35 minutes or until topping is golden brown. sprinkle top with additional cheese.
