5 lb. russet or other mashing potato
8 oz. package of cream cheese
2 eggs
2 sticks butter (1/2 lb.)
milk, enough to make a creamy consistency

Directions:
Directions:
Peel and cut potatoes into cubes.

Place in a large saucepan. Add water to cover and cook until tender.

Drain water from pan. Mash the potatoes in the pan. Add the cream cheese, eggs, and butter. Mix well. Add enough milk to make a creamy consistency. Mix.

Butter a 9" X 13" glass pan. Spread the potatoes even in the pan. Bake at 350º F for 30 minutes.
