20 small marshmallows
1 cup crushed pineapple
1 heaping cup cold rice (cooked)
1/2 cup sugar
1/8 tsp. salt
1-2 pt. whipping cream
1 small jar maraschino cherries

Directions:
Directions:
Use small marshmallows or cut large ones into four quarters. Drain pineapple. Drain maraschino cherries. Mix marshmallows, pineapple, cherries, rice, sugar and salt together. About 4 hours before serving, add whipping cream.

Mom used to make this a lot for holidays. The cherries turns the dish to a pink color. Very tasty. Mom and Peggy used to come to Kingsport years ago for a day of shopping. We first saw this rice at one of the buffets where we had lunch. Mom found the recipe and started making it. On those shopping trips, I would meet Mom and Peggy, usually with Karen along before she started school. We would often have lunch at the snack bar of Woolworth's. Mom would then proceed to buy Karen something from the store. One of Karen's favorite memories.
