3/4 cup finely chopped onion
1 1/2 cups chopped celery
1 cup butter
2-3 loafs hard bread broke into cubes
2 tsp salt
1 1/2 tsp dried sage
1 tsp dried tyme
giblets from turkey chopped
1/2 tsp pepper

Directions:
Directions:
Bread can be put into oven on warm setting to harden or under broiler. Place slices on cookie sheet. When tops of bread are hard flip and do the same for the other side. Break into pieces into large bowl.
Boil giblets in large pot with about 8-10 cups water. (save water)
Cook and stir onion and celery in butter until onion is tender. Stir in about 1/3 of bread. Turn into deep bowl. Add giblets and rest of ingredients. Add about 1 cup of water from giblets and stir. Continue adding water until all bread crumbs are moist. You can add more seasonings to taste.
REMEMBER NEVER stuff a turkey until you are ready to put it in the oven.
