1 lb. ground beef, pork, or Italian Sausage
1 tbsp. olive oil
1 clove garlic, minced
2 tbsp. dried parsley, halved
1 tbsp. dried basil
1 large can tomatoes, (or 1 pound fresh)
1 can tomato paste
2-12 oz. cartons of large curd cottage cheese
2 eggs, beaten
1/2 c. Parmesan cheese
1 pound mozzarella cheese, grated
Salt and Pepper to taste
1 package of lasagna noodles

Directions:
Directions:
Brown meat in oil; drain fat.
Add the next six ingredients. Simmer uncovered, until thick. About 1 hour stirring occasionally.

Cook noodles according to directions on package and drain.

Combine cottage cheese with eggs, salt, pepper, parsley and Parmesan cheese.

Place half of the noodles in a greased 13X9X2 pan. Spread half the cottage cheese mixture then half of the mozzarella cheese. Top with half the meat mixture. Repeat layers.

Bake in 375º oven for 30 minutes.

Note: When arranging bottom layer of noodles in the pan, lay half in opposite direction.
