2-15oz. cans Cannellini beans, rinsed & drained
4 cups chicken broth
2 cups canned plum tomatoes
1 lb. Ditalini pasta
2 cloves of garlic, crushed
1 small onion, peeled & diced
2 tbl. olive oil
1/2 stick of pepperoni, diced
1 tbl. parsley
salt and pepper to taste

Directions:
Directions:
In a 2 quart saucepan, heat olive oil over medium heat. Add onion, cook until translucent, then add garlic. Saute until lightly browned.

Lower heat, add salt, pepper, parsley and pepperoni. Saute 5 minutes.

Add chicken broth to mixture, bring to a boil, then add the drained beans and bring to a second boil. Reduce heat, add the tomatoes and simmer about 1 hour, until beans are tender (not mushy!) and the broth is reduced & thickened. Add pasta and cook until al dente.

Serve with grated cheese.
