1 package yeast
1/4 cup warm water (105-115 degrees)
1 cup creamed cottage cheese
2 T. sugar
1 T. minced onion
1 T. melted butter or margarine
2 t. dillseeds
1 t. salt
1/4 t. baking soda
1 egg
2 1/4 to 2 1/2 cups all purpose flour

Soften yeast in warm water; set aside. Heat cottage cheese to lukewarm in a saucepan. Combine cottage cheese, sugar, onion, melted butter, dillseeds, salt, soda, and egg in a large bowl. Stir in yeast. Add flour to make a stiff dough; beat well. Cover and let rise in a warm place until doubled in bulk, about 50 to 60 minutes. Stir down dough. Spoon into a well greased loaf pan or 2 qt. round baking dish. Let rise in a warm place until doubled in bulk, about 30 to 40 minutes. Bake at 350º for 30 to 40 minutes or until golden brown. Brush with softened butter.

When my mom makes this bread, she calls me to come over right before it's out of the oven. I can smell it's delicious aroma at the front door! Be sure to eat a buttered slice when it's still warm! If there's any left it makes a wonderful piece of toast in the morning or a mean grilled cheese!
