2 gallons of large cubed rings. (about 15 cucumbers that are skinned and cored.)
2 cups lime
8 1/2 quarts water
1 cup cider vinegar
1 tsp alum
1 small bottle of red or green food coloring

2 cups of vinegar
10 cups sugar
1 pkg. red hot candy
2 cups water
8 cinnamon sticks

Directions:
Directions:
Skin, core and slice cucumbers into rings. Put rings in lime water, stir and let stand 24 hours in crock. Drain rings and wash in cool water. Pour cold water over rings and soak 3 hours. Drain. Pour over rings - 1 cup cider vinegar, 1 tsp. alum, 1 small bottle of food coloring, and then enough water to cover rings. Heat and simmer 2 hours. Drain.
Syrup: Consists of 2 cups of vinegar, 10 cups sugar, 1 pkg of red hot candy, 2 cups of water and 8 cinnamon sticks. Bring to boil and pour over rings. Put a plate or covering over crock and let stand overnight. Drain and reheat syrup for 3 mornings. Last morning heat rings and syrup to boiling. Pack into jars and seal.
