Ingredients: VANILLA FILLING : 1. Scald 3 -1/2 cups of milk 4 cups milk with 4 tbsp sugar Mix flour, 6 tbsp sugar salt, and remaining 2 tbsp 4 tbsp flour sugar. Stir in remaining 1/2 Dash of salt cup milk. Add eggs and 3 eggs beaten mix thoroughly. 1 tbsp. vanilla 2. Combine with scalded milk mixture (adding a small amount at a time to pre- vent cooking eggs). Cook until thick, stirring con- stantly. Cool; add vanilla and chill.
LEMON FILLING; 1/2 stick butter 1 cup sugar 4 tbsp flour 2 cups milk 2 eggs, beaten Zest of 1 lemon and juice. 1. Melt butter; add sugar and flour blending well. Gradually add milk> Heat in double boiler until it begins to thicken. 2. Mix eggs, lemon juice and zest. 3. Gradually add about 1 cup of the hot milk mixture to eggs. Combine the two mixtures and cook in top of double boiler until thick, stirring constantly. CHOCOLATE FILLINGS; 1 cup sugar 1/4 cup flour 2 chocolate squares , unsweetened 3 tbsp butter 1-1/4 cups milk 1 egg beaten 1 tsp vanilla extract In a double boiler mix sugar and flour. Add chocolate and butter. Combine milk and egg and add to mixture. Cook over boiling water, stirring constantly. When mixture thickens, remove from heat, add vanilla and stir well. BUTTERSCOTCH CREAM: 1 cup brown sugar, packed 2 tbsp. cornstarch 1 dash salt 2 eggs, beaten 2 cups milk 1 tsp vanilla 2 tbsps butter 1. Combine the brown sugar, cornstarch and salt. 2. Combine eggs, milk and brown sugar mixture. Whisk everything together well and microwave for 5 minutes. 3. Whisk the pudding again and return to microwave for another 5 minutes. Whisk again and add vanilla and butter.
