Ingredients: 1 ˝ lbs ground beef 1 onion 1-2 cups vegetable (Use frozen peas & carrots & add a can of corn) 1/ ˝ - 2 lbs potatoes (3 big ones). Use instant serving for 8. 8 tablespoons butter (1 stick) ˝ cup beef broth 1 teaspoon Worcestershire sauce Salt, pepper, other seasonings of choice. Shredded Cheese

Directions:Make potatoes ( & mash if not instant). Season to taste. Melt 4 tablespoons (1/2 a stick) in large frying pan. Sauté onions in butter until tender over medium heat (10 mins). Add vegetables, according to cooking time. Put carrots in with onions. Add corn or peas either at the end of the cooking of onions, or after the meat has initially cooked. Add ground beef & sauté until no longer pink. Add salt & pepper. Add Worcestershire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 mins., adding more beef broth as necessary to keep moist. Place beef & onions in baking dish. Add cheese on top of beef. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use a fork to make some designs in the potatoes as well. Cook @ 400 degrees until bubbling and brown for 30 mins. Add cheese on top during last 5 mins to melt. |
