Ingredients: 1 package of prepared Tamales of your choice - pork, beef, or chicken (about 8-10 Tamales) 1 pan (8 inch) corn bread 2 cans (14 1/2 oz each) diced tomatoes with green chilies or diced Mexican style tomatoes 2 tbsp pure olive oil 1 large onion, chopped (1 1/2 to 2 cups) 1 tbsp Mexican-blend seasoning (or 1 tsp each Chile powder, garlic powder and ground cumin) 8 oz (2 cups) shredded Mexican-blend cheese

Directions:1. Heat oven to 350. Coat a 9 x 13 inch baking dish with non-stick spray. 2. Crumble (or cut) tamales and corn bread into small pieces; place in a large mixing bowl. Drain juice from tomatoes and green chilies. Set aside. 3. Heat oil in a large skillet over Medium-High heat. Saute onion 5 mins. Add Mexican seasoning and drained tomatoes; cook 5 mins. longer or until onion is tender. Toss mixture lightly with tamales, cornbread and cheese. Keep mixture loose; don't over mix or pack down. 4. Transfer dressing to baking dish. Bake 30-40 mins. or until browned. |

Notes: This is a recipe my hubby found from @ our local grocery store (HEB), who prepares their own amazing Tamales. He made it for Thanksgiving & it was one of the first things gone. Try it, it's different & amazing!
