1 c whole milk
5 T sifted cocoa
2 c sugar
pinch salt
1 T butter
1 t vanilla

Directions:
Directions:
Put milk in a pan with cocoa. Cook over medium heat stirring constantly with a wire whisk until it comes to a boil. Add Sugar and salt. Boil until it forms a ball in cold water*. Remove from stove and add butter and vanilla. Stir until it looses "glossy look" and becomes dull. Put pan in a sink with a little ice water before beginning to stir.
Transfer into a buttered glass Pyrex dish and let set

* I use a small juice glass with cold water and keep testing until it gets to the hard ball stage (145-150 on a candy thermometer). If cooked too long or stirred too long, fudge will be hard.
