- 2 lbs. potatoes
- 1 can Rotel diced tomatoes & green chilies
-8 oz sour cream
-3/4 cup shredded cheddar cheese

Directions:
Directions:
- Preheat oven to 350 degrees
- Cook spuds in boiling water till tender
- Drain & mash with Rotel & sour cream until smooth
- Spoon into 2 quart baking dish.
-Bake 25 minutes
- Top with cheese
- Bake another 5 minutes or till cheese melts
