Ingredients:  
• 4 cups vinegar Clean beets and parboil. When cooled, remove skins from beets. Cut into desired sizes and fill sterilized jars.

Boil ingredients and fill beet filled jars to top. Close jars and process for 20 minutes in boiling water bath.
• 1 ½ cups water
• 1 cup sugar
• 1 ½ tsp salt
• 6 tbsp pickling spice
