2 large eggplants peeled and cut lengthwise
12 eggs
1/2 cup Romano cheese
black pepper to taste
4 cups Italian flavored bread crumbs
Vegetable oil for frying

Topping
3 Cups Tomato Sauce
1/2 cup Romano Cheese
2 cup Shredded Mozzarella

Directions:
Directions:
In a mixing bowl add eggs, Romano cheese and black pepper. Gently dipped each slice of eggplant into egg mix and pound gently into a bowl of Italian bread crumbs creating an eggplant cutlet. Shake off excess bread crumbs. Add vegetable oil to fry pan. When oil is hot add eggplant cutlets and cook until lightly brown. Turn eggplant and cook other side. Once done, remove eggplant from oil and place on cookie sheet lined with paper towels.

After cooking all eggplant gather a casserole dish and layer casserole dish with a bottom layer of tomato sauce. Add a layer of eggplant, more sauce Romano cheese and then shredded mozzarella. Continue making layers until all eggplant is done. Bake in oven at 350 degrees until approximately 40-45 minutes.

When slicing eggplant make sure you slice it very thin. When frying eggplant in oil make sure eggplant is cooked until lightly brown and crispy. On any given day you can pop into Rig A' Tony's and see Tammy making the eggplant. Her eggplant is out of this world. Tammy is such a great soldier because making the eggplant is such a pain in the ass. Believe it or not Tammy has the patience to fry each piece perfectly. Unfortunately Tammy has inherited the job of making the eggplant as well as inheriting the job as my Tonto.
