1 ¼ Cup grahm cracker crumbs
¼ cup sugar
1/3 cup butter or margarine, melted
16 oz. cream cheese, softened
14 oz. sweetened condensed milk
3 eggs
¼ cup lemon juice
8 oz sour cream @ room temperature, (Optional)
21 oz. pie filling, for top

Directions:
1. preheat oven to 300.
2. Combine grahm cracker crumbs, sugar and butter; press firmly on bottom of 9 inch springform pan.
3. In a large bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and lemon juice; mix well. Pour into prepared pan.
4. Bake for 50 to 55 minutes or until center is set. Remove from oven; top with sour cream and bake an additional 5 minutes.
5. Cool for 1 hour. Chill at least 4 hours. Garnish with pie filling. Store leftovers covered in refrigerator.

*We prefer it without the sour cream. and to get the cheesecake onto a serving platter. i used a piece of thread and sawed under the crust to loosen and then used my long bakers spatula to help slide it off the pan. Also chilled for 1 hour in the freezer before transeferring cheesecake. Was very easy...
