1 lb ground chuck
2 cups diced onions
1 cup diced celery
2 32 oz boxes beef broth
3 cups quartered red potatoes
1 can diced tomatoes
1 cup chopped carrots (1/4 in pcs)
1 tsp salt
1 tsp ground black pepper
1/2 tsp ground cumin
1/2 tsp ground red pepper (cayenne).

Directions:
Directions:
In a large Dutch oven, cook beef, onion, and celery over medium-high head for 5 minutes or until beef browns and crumbly and onion is soft. Drain beef mixture, and return to Dutch oven. Add broth, potatoes, tomatoes, carrots,salt pepper, cumin, and red pepper. Bring soup to a simmer and cook uncovered for 30 minutes or potatoes are tender, stirring frequently.
