2 1/2 lbs pork tenderloin
1/4 c soy sauce
1/4 c bourbon
2 Tbsp packed brown sugar
Mustard Cream Sauce
1/3 c sour cream or plain yogurt
1/3 c mayonnaise
1 Tbsp dry mustard
1 Tbsp green onion -- finely chopped
1 1/2 tsps vinegar
salt and pepper

Directions:
Directions:
Place meat in ziplock plastic bag in mixture of soy sauce, bourbon and brown sugar.
Marinate in refrigerator for several hours or overnight.

Meanwhile combine ingredients for the mustard sauce. Chill several hours.

To roast pork, transfer meat to shallow roasting pan and reserve marinade.
Bake at 325*, basting frequently with marinade, until internal temperature of 160*,
about 20 to 25 minutes per pound (about an hour)

Carve diagonally and serve with Mustard Cream.
