8 - 3/4 " pork loin chops
1 Tbsp vegetable oil
1/2 tsp salt
1/4 tsp pepper
2 c apple cider or juice
3 Tbsp spicy brown mustard
3 med red apples -- sliced
1/2 c sliced green onions
1/4 c raisin
1/4 c dried currant
2 Tbsp cornstarch
1/4 c cold water

Directions:
Directions:

In a large skillet, brown pork chops in oil, on both sides.
Sprinkle with salt and pepper.

Combine cider and mustard; pour over meat.
Bring to a boil; reduce heat.
Cover and simmer 13 to 18 minutes. (juices will run clear in meat)
Remove chops to a serving platter; keep warm.

Add apples, onions, raisins & currants to skillet.
Cover and cook over med. Heat for 5 to 6 minutes, or apples are tender.
Combine cornstarch & water until smooth;
Stir into apple mixture.
Bring to a boil; cook and stir for 2 minutes or until thickened.
Serve over pork chops.
