Apple Pork Tenderloin Recipe

1 pkg pork tenderloin -- (2 strips)
1/4 c bourbon or whiskey
1/4 c soy sauce
1/4 c brown sugar
2 lg sweet potato
1 can apple pie filling
1 pkg snow peas pods

Directions:
Directions:
Marinate pork tenderloin about 24 hours in bourbon, soy sauce and brown sugar.

Bake meat & juice from marinate in sprayed Pyrex dish for about 20 minutes at 350*, until slightly browned.
Slice into 1" to 1 1/2" slices. Lay in single layer in the marinate back in the baking pan.
Bake sweet potatoes about 30 minutes, until almost done & cut into 1" slices
If snow pea pods are frozen, microwave about 4 minutes. If they are fresh, just place on apple pie filling.

Place yam slices on tenderloin pieces, then top with apple pie filling and then snow peas.
Cover and bake at 350 another 20 minutes or so. It will take about 30 minutes if ingredients are still cold.
