1/8 lb. salt pork
2 large heads cabbage, blanched
1/2 lb. ground beef
1/2 lb. ground pork
1/2 small onion, minced
1/2 tsp. minced garlic
1 cup rice
1/2 tsp. salt
Pepper to taste
1 can tomato soup
1/2 cup water

Mince salt pork finely and render in skillet; add onions and sauté in drippings until soft. Remove onions from pan. Set aside.

Core cabbage heads and then boil gently for 5 - 8 minutes to loosen the leaves. Remove from simmering water. Drain. Take leaves off one at a time and set aside to cool.

Meanwhile, mix together the water and the tomato soup. In a separate bowl, combine the meats, onion, rice, salt, pepper, and a little bit of the tomato soup/water mixture.

Place enough cabbage leaves into a deep baking dish to cover the bottom, and then fill each remaining cabbage leaf with approximately 1 Tbsp. of rice-meat mixture. Fold each leaf over horizontally and then bring in the sides to make a pocket. Place, seam side down, into the baking dish. Pour remaining tomato liquid and rendered salt pork over cabbage rolls. Bring to a boil on stove top; turn down and simmer (covered) for 2 hours.
