Solution: (makes 3 quarts)
4 cups water
2 cups vinegar
1 tblsp mixed spices
1 1/2 cup white sugar

Directions:
Directions:
Wash beets & boil until allmost cooked, peel & cut in chunks. Sterilize jars in boiling water & keep hot until ready to use.
Bring solution to a boil for 5 minutes while stirring, add beet chunks & bring to a boil again, fill hot jars with solution to top and seal.

When the jars start to cool down the lids will snap down to seal. If you can push down in centre of jar they are not sealed properly & you will have to refrigerate & eat soon or reheat jars and do again.
