1 garlic clove,minced
2 tbsp. soy sauce
2 tbsp. honey
1/2 tsp. ground ginger
4 boneless skinless chicken strips (about 2 4 ounce packages)
1/2 (8oz.) can pineapple chunks and juice
2 green onions, sliced
1/2 small. red pepper, diced

1.) In small bowl combine garlic, honey, soy sauce, and ginger.
2.) In 11X7 in. baking dish, arrange chicken with thicker strips toward the edges of dish.
3.) Spoon about 2 tbsp. of garlic mixture over chicken cook, covered, at 350º for approximately 1 hr.until tender
4.) Rearrange and spoon garlic mixture over chicken halfway through cooking. Drain pineapple, reserving 1/4 cup juice. Add pineapple, reserved juice, green onion, and red pepper to garlic mix in small bowl.
5.) Cook, covered, on high 1 to 2 min. until slightly softened and heated through
