Ingredients: 1/4 c. vegetable oil, pan drippings or combination 1/2 c. flour 2 c. of milk Salt and pepper to taste 1 28-oz. can diced tomatoes, drain off 1/2 the juice

Directions:Heat the oil in a large cast iron skillet. Add the flour and stir constantly until the flour is blond in color. Pour the tomatoes and juice into the flour and stir. Add the milk, slowly stirring constantly until it is blended and smooth. You may need more milk to get the right consistency. Cook on low heat for about five minutes. Salt and pepper to taste. Serve over biscuits. |

Notes: When I was a child, my parents and my sister and I lived in the farm house with my great grandmother, and my grandparents. My grandmother was so proud of her garden and especially her tomato crop. She saved the tomato seeds each year and planted so many that we had tomatoes for every meal including breakfast. We ate tomato biscuits, tomato sandwiches, tomato pudding, tomato soup and we drank tomato juice. My mamaw loved working in her garden. Neighbors came to admire her garden. She never wrote down her recipes so this is my version of my mamaw's well-loved tomato gravy.
