1/4 C flour mixed with salt and pepper
1/2 C milk or less

Coat pork chops in flour mixture. Shake off excess and save. Melt 1 T shortening, butter, or olive oil into skillet on high until it sizzles. Add pork chops and turn down to medium heat. Brown on both sides (10-15 minutes). Place pork chops into 325º oven until ready to serve.

Gravy: turn heat under skillet up to medium high. Add leftover flour, sprinkled evenly, and heat until lightly brown (slightly scorched). Add milk and stir evenly and constantly until thickened. Serve immediately.

Great over either mashed potatoes or bread.

This was the very first recipe I learned from Mom- probably not the best choice, since the popping fat scared me to death!
