4 c. cooked rice (brown or white your choice)
1 lb of hamburger or sausage (cooked drained and crumbled)
1 whole onion (chopped med/fine)
1 bell pepper (chopped med/fine)
1 jar Woody's© Cookin' Sauce
6 to 8 scrambled eggs
1 c. shredded cheese

Preheat oven to 350º
Saute` the onion and pepper til onion is translucent. Scramble the eggs and then mix everything except cheese together in a large bowl. Mix well. Then transfer everything to a casserole dish and sprinkle with cheese and bake til heated though and cheese is melted.

This was given to me by a good friend named Dee Dee. She is no longer with us but we sure loved this stuff. I modified it to 1 jar of picante` sauce instead of the Woody's© I also add salt and pepper to taste. It makes an awesome breakfast but can also be a rib stickin' dinner casserole with tortillas and a green salad.
