Directions:
Par-boil squirrel, onion, salt and pepper together until you can stick a fork in the meat and pull it out. Stop the boiling and drain the water. May freeze squirrel in covered water after this step if not ready to eat.

If wanting to eat right away, then coat with flour, salt and pepper, add onion (optional), add butter and oil to pan. Fry squirrel to brown.
