1 slow- cooker liner
cooking spray
1 1/2 cups quick- cooking white rice
6 skinned and boned chicken
breasts
1 tsp. salt
1/8 tsp pepper
1 cup matchstick carrots
2 cups( 8-0z ). shredded
cheddar cheese
1 cup frozen chopped onion
1(8-0z) can sliced water chestnuts drained
2 ( 10-3/4-0z.) cans cream of
chicken soup
6 fully cooked bacon slices
1(16-oz ). package frozen broccoil
cuts(do not thaw).
2 to 3 cups coarsely crushed
ridged potato chips

Place slow- cooker liner in a 5-or 6- qt.slow cooker. coat liner with cooking spray .place rice in liner. sprinkle chicken with salt and pepper. heat a large non- stick skillet over medium- high heat. coat pan with cooking spray. saute chicken in 2 batches. 2 minutes on each side or until browned. place on top of rice. top with carrots , 1 cup cheese, onion and water chestnuts. sprinkle with remaining 1 cup cheese top with soup. pour 1 1/2 cups water around edges. cover and cook on low for 6 hours. stirring gently after 5 hours to break up chicken into chunks. crumble bacon; add to slow cooker. stir in broccoli cover and cook on low 1 more hour. top with chips before serving.
