8 chicken thighs (keep in ice water and salt til ready to cook)
2 c.all-purpose flour
1 T.season salt
1 T poultry seasoning
1 tsp garlic powder
1 tsp onion powder
sea salt and ground pepper to taste
enough oil to halfway cover chicken

Directions:

Heat oil in a large electric frying pan to 375º
Mix all dry ingredients in a bowl or shake together in a plastic bag.
Shake off excess water from chicken thighs and dredge through flour mixture (or shake in plastic bag and shake off gently) and place gently in hot oil, skin side down. Cover and fry for about 20 minutes til a nice golden brown. Turn once and continue to cook uncovered for another 15 minutes or until juices run clear when fork pierced. Drain on paper towels or drip racks for about 5 minutes to let it rest before serving.

I use leg quarters and split them for cost savings. This is a great recipe for a down home country meal. Served with biscuits and homemade gravy just makes it that much more yummers!
