1 can tuna in olive oil
1 tbsp mayo
1 tbsp oil reserved from can of tuna
1 tsp red wine vinegar
2 tbsp minced red onion
2 tsp minced fresh garlic
1/4 roasted red pepper, minced
1 tbsp minced fresh parsley
fresh ground pepper
salt to taste

Open can and strain over bowl, reserving oil. In a small bowl break tuna into chunks-don't mash! Mix all ingredients together and serve on fresh bread.
