Jalapeņos-cut in half lengthwise (seeded and deveined)
1 block cream cheese at room temperature
1 lb bacon (applewood smoked if you can find it) cut in half

Preheat oven to 425. Line a rimmed baking sheet with foil and set a rack on it if you have one. This allows the bacon to cook faster.

Spread cream cheese in the halved jalapeņos then wrap a half piece of bacon around it. Set them on the baking rack and bake until the bacon is to your desired crispiness. This usually takes about 30-40 minutes depending on the thickness of the bacon.
