1 large green pepper, julienned
1 large yellow squash, sliced thinly
1 medium sweet onion, sliced thinly
1 Tbsp. extra-virgin olive oil
1 Tbsp. butter
1 tsp. parsley
Salt and pepper
Parmesan cheese, grated

Directions:
Directions:
In a deep skillet, sauté vegetables in hot oil and butter until just soft-tender. Sprinkle on the parsley flakes and salt and pepper to taste. Toss to coat and sauté one minute more. Remove from heat and sprinkle on Parmesan cheese before serving.
