Country Breakfast Casserole Recipe

1 T. vegetable Oil
4 potatoes, diced
1 sweet red pepper, diced
1 green pepper, diced (you also may use yellow ones)
1 onion, minced
1 cup egg substitute
1 c. milk
2 T. all-purpose flour
t. pepper
4-0z. Shredded Cheddar cheese
8-oz pkg. breakfast link sausage, chopped

Heat oil in medium skillet. Fry potatoes in oil until golden. Add red and green peppers and onion.
Mix egg substitute, milk, flour, pepper, cheese, and sausage together in mixing bowl. Fold in hot potato mixture. Coat a 12x8 baking dish. Bake at 350 degrees for 45 minutes. Makes 8 servings
