1 stick of butter
3/4 c. sugar
2 eggs
1 c. all-purpose flour
1 c. whole wheat flour (OR 2 c. all-purpose OR 2 c. whole wheat)
1 tsp baking soda
1/2 tsp salt
3 large ripe bananas, mashed
2 cups chocolate chips (regular or mini)
1 tsp vanilla

1. Preheat oven to 350º. Cream butter & sugar until light & fluffy. Add eggs one at a time, beating well after each one.
2. Mix dry ingredients together and add slowly to batter, mixing well. Fold in bananas, chocolate chips & vanilla. (I just dump them in & mix briefly).
3. Pour into lined muffin pans and bake 20 minutes or so.

Great freezer recipe! Make a double or triple batch. Scoop batter into muffin liners in tins or foil muffin liners on a pan. Freeze. Then put frozen muffins into freezer bags. Pull out however many muffins you need that morning. Bake in muffin pans at 375 degrees for 20-30 minutes. Cooking time will vary slightly based on your recipe, so watch them the first time. Can do this with most any muffin or cookie recipe!
Tammy Tillinghast Brooks has the same recipe but adds 1 c of chopped pecans for a yummy option.
