Sweet potatoes (cooked and peeled, in that order) 3 lbs.
eggs lightly beaten 3
orange juice 1/2 c.
butter 1/2 c.
brown sugar 1/2 c.
vanilla 1 tsp.
ground nutmeg 1/2 tsp.
mini marshmellows 1 bag
Directions:
Directions:
* Mash Sweet potatoes
* Add: eggs, orange juice, butter, brown sugar, vanilla, and nutmeg; mix well
* Put in 3 qt. baking dish.
* Bake at 350ºF for 40 min. or until set.
* Top with marshmellows
* Return to oven until they begin to puff or melt
* Remove as edges of marshmellows begin to brown lightly.
Serves 10-12
