12 c. lightly packed bread crumbs
1 to 1 1/2 c. diced celery
1 to 1 1/2 c. diced onion
2 to 3 tbsp. parsley
1 lb. sausage
1 to 1 1/2 tsp. poultry seasoning, sage and thyme
3 to 4 peeled apples cut in sm. pieces
3 or 4 carrots diced fine
Salt and pepper

Combine the first 4 ingredients well, and let sit for 4 hours, covered. Mix the remainder into the bread mix right before stuffing the bird. I add only a bit of salt and pepper depending upon what type of sausage I use. I also tend to use red delicious apples, not granny apples.

This simple turkey stuffing was used by my mother who got it from her mother, pure German. I have never been able to make it as well, even though she still tells me it is easy. It is delicious...
