2/3 c. whole wheat flour
1 c. oat bran
1 c. rolled oats (not the instant kind)
1/3 c. cocoa
1 tsp. baking soda
1/2 c. sugar
1 egg
1 c. plain yogurt
2 tbsp. vegetable oil
1 tsp. vanilla
3/4 c. mashed sweet potato
1 zucchini, grated
1/2 c. dark chocolate chips

Directions:

In a large bowl, mix the flour, bran, oats, cocoa, baking soda and sugar.
In another bowl, mix the egg, yogurt, oil, & vanilla.
Add the wet ingredients to the bowl with the dry ingredients and mix together. Fold in the sweet potato, zucchini and chocolate chips.
Spray muffin tins with cooking spray (e.g. PAM), and fill each muffin cup about 3/4 full. Bake muffins at 350º for about 15 minutes.

These are a great way to enjoy a sweet treat while reducing the fat and sneaking in some fibre and veggies (my kids can't tell there are vegetables in them and I don't feel guilty giving these to them). Hope you enjoy them!
