1/4 c. olive oil
3-4 large leeks (white part sliced thinly, top greens removed)
1/4 c. sliced green onion
3 eggs
1 1/2 c. milk
1 c. feta cheese, crumbled
3/4 c. flour
1/4 c. fresh dill, chopped
salt & pepper

Directions:
Directions:
In a frying pan, saute the sliced leeks in olive oil until softened. Add the green onions and saute for another couple of minutes.
In a bowl, beat the eggs and milk. Add the feta cheese, flour, dill and salt and pepper (not too much salt as the cheese is salty). Then add the leeks and onions to the bowl.
Pour the mixture into a greased dish (like a glass pie pan/dish) and cook at 350º for about an hour. Let it cool before cutting. This tastes great lukewarm or at room temperature, and is even better the next day. Serve with a nice green salad and buon appetitio (or as the Greeks would say, kali orexi!).
