1 package active dry yeast
1 1/4 c. lukewarm water
3 c. flour
1/4 tsp. salt
1/2 c. vegetable oil

Directions:
Directions:
Dissolve yeast with the warm water. Measure flour and salt onto counter or a large wooden board. Make a well in the centre of the flour. Gradually add the dissolved yeast and the remaining water, pulling flour into the liquid. Knead for about 8 - 10 minutes until dough is smooth and elastic. Put dough into an oiled bowl, turn to coat, and cover with a thick dish towel. Let it rise in a warm place until doubled in size, about 2 or 2 1/2 hours.
In a large skillet, add vegetable oil over medium heat. Pinch off a piece of risen dough (about the size of a plum) and roll it out into a long piece, then form a circle (like a thin doughnut). Repeat for the rest of the dough.
Fry the zeppole in the fan a few at a time. Turn until all sides are golden brown and then drain on paper towels.
Options: You can mix raisins into the dough if you wish for a "sweet" version, and/or sprinkle with granulated sugar when you remove them from the pan.
You could also add about a cup of mashed potato to the dough mixture for a slightly different texture.

These simple but delicious treats were a staple at Carlo's house on special occasions, especially at Christmas. For a much quicker version, cheat like I do and buy prepared pizza dough. Enjoy!
