4 eggs
2 c. sugar
1 c. oil
1 c. chopped walnuts
2 c. grated (like carrots) zucchini
3 1/2 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder

Directions:

Mix all ingredients together and bake in two well greased loaf pans at 350º for an hour. I like to use four smaller loaf pans (3 x 6) and bake for 45 min. Insert a wooden toothpick in the center to test for doneness. Cool for 15 min. in the pans, then remove to wire rack.

How to grate zucchini:
Cut zucchini into chunks. Place in a blender and cover with water. Blend at "chop" for a few seconds. Drain the zucchini by pouring this into a colander.
