3 1/3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1 can (1 lb.) pumpkin
2/3 c. water
2/3 c. soft shortening
2 2/3 c. sugar
2 eggs

Grease two 9x5x3 loaf pans (I like to use four 7x3x2 loaf pans) and lightly dust with flour.
Sift first 6 dry ingredients together. Set aside.
Combine pumpkin and water together. Set aside.
Combine shortening, sugar and eggs in a large mixing bowl. Beat at high speed for 3 min. Remove from mixer, adding flour mixture alternating with pumpkin mixture, beating after each addition until batter is smooth.
Pour evenly into prepared pans. Bake 350º for 45 min., or until a wooden toothpick inserted in the center comes out clean. Cool on wire rack 10 minutes. Turn out onto rack. While loaves are still warm, sprinkle with powdered sugar.
